Πρασοσελινο (Prassocelino)

Braised Leeks with Celery & Pork 🙂 it’s a favorite Greek dish called Πρασοσελινο (Prassocelino)

Instructions

Use the whoooooole leeks ... just trim off the very tippy tops and the rooty toes ...

Traditionally, the dish is braised ... but I pressure cook about a pound of pork (something cheap, I like the boneless ribs, but anything will do ..)

Pressure cook the meat for 45 mins without browning in as little water as possible ...

Meanwhile, split the leeks and cut them into 2” pieces. Rinse these really well (so.much.sand.) and then let them soak all day.

Cut the celery (all the celery, leaves and everything except the stub at the bottom) into 2” pieces

When the meat is done, add all the leeks and celery (after they are really drained ..)

Add 1/2 cup good olive oil (when I say “good” I obviously mean “Greek” olive oil, LOL) and plenty of salt & pepper

Pressure cook for 20 mins and dress with Lemon juice ...

It’s a family favorite, it usually takes all day to cook, but the instapot lets me only take a couple hours 🙂 (don’t tell my mother in law...)

(If you are cooking for Greeks, double the salt & olive oil 🙂 )
