Kale Salad

Ingredients

1 large bunch of kale

2 tablespoons extra-virgin olive oil

zest amd juice of 1 lemon

1/2 cup dried cranberries

1/2 cup parmesan cheese

1/2 cup toasted pine nuts or walnuts

Instructions

  1. To toast walnuts, bake at 325 degrees or warm on medium heat in dry skillet until they become crisp and fragrant (about 10 minutes in oven or 5 minutes on stovetop)
  2. Cut and discard tougher center of the kale.
  3. Stack and roll leaves and chop finely.
  4. Place in large bowl, toss with remaining ingredients.
  5. Add sea salt and cracked black pepper to taste.
  6. Let mellow in fridge for a couple of hours to soften kale and allow the flavor to develop.
  7. Add remaning 3 tablespoons olive oil to walnuts, a few pinches of salt and red pepper flakes and stir to combine.
  8. Enjoy!
